Recipe: Chocolate Zucchini (Cup)Cakes

Woke up to a cool morning and thought it would be a perfect time to do a little baking.

These are cupcakes based on the recipe for Chocolate Zucchini Cake from Simply Recipes. It is a great way to use up the really big zucchinis from your garden - the tougher squashes work well in baking. I left out the orange zest and the nuts.

I made a basic buttercream frosting and plucked some chicory flowers (they grow wild all over our land) for decorations. They eventually got a little wilt-y. Might be fun, if I really had my act together, to make crystallized flowers for cupcake decorations.

So . . . these were today's (cringe, sheepish smile) breakfast. This is a wonderful recipe.

Those cupcakes look wicked good and I love the flower on top. Yum! I'm going to have to try this once I have enough zucchini.

Hey Garden Ho,

They *are* wicked good. So good, in fact, that all weekend, wherever I was - it was all about when I would be getting home to have another cupcake. Eeek. And if you are growing zucchini - you definitely will have enough. I promise you that . . . happy baking!

Hi Kylee,

Thanks so much . . . the chicory definitely wilted - so they end up looking more like pressed flowers. Might make more of a statement if you put more than one on each cupcake. Either way, chocolate cupcakes . . . you can't go wrong!

Have you ever made Coffee from Chicory roots? I here it is a time honored thing to do, especially in the deep south. (Sometimes mixed with real coffee). I've always wanted to try it.
