Radish Butter
Sometimes, if I can't fall asleep, I set the iPod up and listen to podcasts of The Splendid Table. And just before drifting off one winter night, I listened to The Lee Brothers talk about radish butter.
This sent me back out to the cold frame in early February to sprinkle down some radish seeds. And yesterday, I harvested the first one.
I have always been meh about radishes. But radish butter is another animal. Peppery and savory. On toasty bread. Whoa. I didn't push it further when Corey declined a taste. Without any hesitation, I just turned back around and polished off the serving myself.
Here's the recipe. If you are lucky enough to have access to fresh, local butter, make the investment!

Where do you get your local butter?
I LOVE radishes. I'm always planting more seeds, so that I always have them. There's nothing like a radish your grow yourself.
Local butter - I get it out here at the Great Valu (true!) - made by the Mennonites. Feast will have it. Maybe IY or Rebecca's? I may have also seen it at Mona Lisa Pasta?
Whole Foods has nutrition information about vegetables posted, and I was surprised to see that radishes rank pretty high. I always thought they were a lightweight vegetable.
WHAT!? Radish BUTTER? I've never heard of it before, and I am the world's biggest radish addict! Off to make some right now!
P_C - I totally didn't know that. I, too, lumped them in with things like celery.
Anotherring - What did you think? Did I tell you yet that I made the Agua de Jamaica and loved it?
I've never tried it. I'm curious though, so maybe I'll have to try.
Great pic! I have such spring fever!
Thanks, Melody! Yee-haw, spring fever!
Tracey, I was so inspired by this post that I had to try the radish butter. I finally made it today... YUM! Anyway, I posted the results to my blog and gave you and The Splendid Table credit for the find! http://flanneljammiesfarm.blogspot.com/2011/04/what-to-do-with-radishes.html
Easter blessings to you and yours!
Nice, donna rae!
